Serving: simple seasonal salad

Whether you're cooking for a gathering or looking for a quick salad snack, we've got you covered. Here's how to throw together a quick seasonal salad with what you have on hand. 

 

Ingredients: 

FOR THE SALAD:

  • Simple version:
    • Seasonal greens
    • Vegetables you have on hand like carrots, tomatoes, or cucumber
    • Fruit in the fridge like apples, oranges, or peaches
  • To elevate it: use the ingredients above, but add crunch—nuts, 'One-Ton' chips, or sesame sticks are our picks. 
  • To go extra: add specialty items from your local market. Our favorites are hemp hearts, chia seeds, and edible flowers.

FOR THE DRESSING: 

  • 1/3 acid (like vinegar, rice wine, citrus juice) 
  • 2/3 oil (like olive, sesame, or avocado oil)
  • 1-2 tbsp. of an emulsifier (like mustard, honey, or mayonnaise)

Instructions: 

1. Make the dressing. 

Start by preparing your salad dressing. This will allow time to let the flavors combine and sit. The basics of a good salad dressing are simple. Whisk together 1/3 acid, 2/3 oil, and 1-2 tbsp. of emulsifier (see below for a cheatsheet). For a silky, well-blended dressing, whisk well, until no oil droplets are visible on the surface. Season with kosher salt, freshly ground pepper, and any additional herbs, spices, or aromatics.

 

2. Prepare the greens. 

Wash and dry your chosen greens. Place them in a large salad bowl. Chop or slice your selected fruits and/or vegetables then add them to the bowl. 

 

3. Assemble + accessorize your salad. 

Drizzle the dressing over the salad and toss gently to combine. Serve and enjoy!

To elevate your salad: add crunch. Sprinkle nuts, seeds, cheese, or "One-Ton" chips into the salad. 

To go extra: add edible flowers from your local market for a visual treat.
